Celebrate Father’s Day in a very simple and personal way. Rather than going out to eat and pay for an expensive meal, why not just surprise your dad by cooking some special dishes for his special day. Doing this may even make this Father’s Day even more memorable. After all, it is not every day that you make a meal especially for your dad. And so, we have chosen three dishes that you can cook for your dad this Father’s Day.
Steamed Fish with Lemon Butter Sauce (Dishkarte, p. 183)
Ingredients:
Set A:
– 250 g. Fish Fillet (Cream Dory, Cod, or Mahi-mahi)
– UFC Iodized Salt and UFC Ground Pepper, to taste
Set B:
– 2 tsps. UFC Garlic Powder
– ½ cup butter, softened
– 4 Tbsps. lemon juice
– 2 Tbsps. fresh parsley, chopped
– UFC Iodized Salt and UFC Ground Pepper, to taste
Procedure:
1. Marinate the fish with salt and pepper. Set aside.
2. In a bowl, mix together butter, lemon juice, and parsley. Season with garlic powder, salt, and pepper, then pour it onto the fish fillet. Steam until it is cooked, then garnish it with parsley and lemon before serving.
Singaporean Pork Rib Soup (Bak Kut Teh) (Kitchen Secrets, p. 44)
Ingredients:
Set A (Boil):
– 8 cups water
– 1 kg. pork ribs, cut into the bone
– 2 heads garlic, peeled
– 4 pcs. star anise
– 2 pcs. cinnamon bark
– 3 Tbsps. soy sauce
– 2 Tbsps. sugar
– Salt and pepper, to taste
Set B:
– 4 pcs. fried tofu, around 200 grams
– 2 bunches fresh cilantro, for garnish
Procedure:
1. In a medium sauce pot, combine pork ribs, water, garlic, star anise, cinnamon bark, soy sauce, sugar, salt, and pepper. Boil for 20 minutes, then lower the heat and simmer for 30 minutes or until the desired tenderness is achieved.
2. Add the fried tofu and cook it for a few minutes. (To cook the tofu, heat the oil in a sauté pan and fry the tofu for 3 minutes.) Serve with chopped fresh cilantro on top.
Tip:
Broths that are rich and flavorful are cooked for a very long time and, after cooking, they will be even riches and more flavorful as they rest overnight.
When simmering meat, add a spoonful of cold water to the pan every now and then to encourage the impurities to rise. When the liquid comes to a boil again, take the pan off the heat and skim off any scum with a metal spoon.
Beef Pot Roast with Mushrooms (Simpol the Cookbook, p. 131)
Ingredients:
Set A:
– 2 kgs. beef kalitiran (2-3 slabs)
– ¼ Old English Worcesteshire Sauce
– ¼ cup Silver Swan Soy Sauce
– 4 Tbsps. sugar
– Golden Fiesta Palm Oil, for searing
Set B:
– 2 Tbsps. oil
– 2 Tbsps. butter
– 1 head garlic, crushed
– 2 cups onions, chopped
– 2 cans UFC Pieces and Stems Mushrooms
– 4 Tbsps. flour
– 1 Tbsp. dried oregano
– 4 laurel leaves
Set C:
– 1 cup white wine
– 5 cups beef stock or water
Procedure:
1. Marinate the beef with Set A ingredients and soak it overnight or up to 2 days. Remove the beef from the marinating bowl and allow the excess juices to drip off. Sear the beef until it is browned on all sides. Set aside.
2. In a pan, heat the oil and butter. Sauté the garlic, onions, and mushrooms. Then add the flour and cook for 2 minutes. Add dried oregano and laurel leaves.
3. Put the beef back and add the Set C ingredients and excess marinade. Braise it for 2 to 3 hours or until it becomes tender. Remove the beef from the pot, then let it rest before slicing it into pieces and arranging it on a serving platter. Spoon the sauce over the beef. Garnish with buttered vegetables.
No matter how delicious your dishes may be, a meal is incomplete without dessert at the end. Not only will it sweeten the palate after an array of savory delights, it will also be the perfect end to the memorable meal that you specially prepared for your father. And so, here are two desserts that will be the sweet resolution to the meal you have prepared for Father’s Day.
Chocolate Banoffee Cheesecake (Baking Simpol, p. 195)
Ingredients:
Set A:
– 1 ½ cups crushed chocolate cookies
– 1/3 cup unsalted butter, melted
– 4 Tbsps. granulated sugar
Set B:
– 2 Tbsps. gelatin powder
– ½ cup hot milk
Set C:
– 3 cups cream cheese, at room temperature
– 1 ½ cups granulated sugar
– 1 tsp. vanilla extract
– 1/3 cup chocolate powder
– 1 Tbsp. instant coffee powder
– 1 cup blended overripe bananas
For the Topping:
Set A:
– 2 to 3 pcs. banana, sliced
Set B:
– ½ cup water
– 2 Tbsps. gelatin powder
– 2 Tbsps. lemon juice
– ¼ cup sugar
– 1 cup water
Procedure:
1. In a bowl, combine all the Set A ingredients and mic until a crumble texture is achieved. Transfer to a cake pan, press it down to form a crust, and let it chill for 30 minutes.
2. In a blender, combine the Set B ingredients and mix until the gelatin is dissolved.
3. Add in he Set C ingredients and blend until smooth and well combined. Pour the mixture over the chilled crust and place it in the chiller to set.
For the Topping:
1. Cut the bananas into rounds and arrange it evenly on top of the cheesecake, then prepare the gelatin mixture.
2. Dissolve the gelatin in hot water and add the rest of the Set B ingredients. Mix until the sugar is dissolved. Pour the mixture over the bananas and chill to let it set.
With these recipes, your Father’s Day meal can be considered complete. Not only will your table be filled with delicious dishes that will surely satisfy everyone, it will also have the sweet delight to treat your palate after a savory meal. Enjoy the moment with your Dad!
