There is more than one way to cook adobo. The various versions out there are dependent on the preferences of each household, making each rendition just as unique as all the others. Rather than getting a taste of the usual adobo that can be ordered at restaurants, cook this Adobong Puti to taste a different kind of adobo.
Compared to the adobo that has a sauce that’s darkened by soy sauce, this adobo is clear but still as flavorful, creating a dish that is just as flavorful. Pair it with rice, or grab a piece of bread to soak up all that appetizing sauce and savor it all in one juicy bite.
Adobong Puti
Ingredients
For the Pork:
- 1 kg. pork belly, diced
- 1 Tbsp. salt
For the Chicken:
- 1 kg. chicken pieces
- 1 Tbsp. salt
For the Sauce:
- Oil, for sautéing
- 1 bulb garlic, pounded
- 1 tsp. whole black pepper
- 1 tsp. freshly cracked black pepper
- 4 - 6 pcs. laurel leaves
- ¾ cup vinegar
- ⅓ cup fish sauce
- 150 g. chicken liver
Instructions
- Season the pork and chicken with salt. Make sure to massage it, so the seasoning is spread evenly.
- In a pan, heat the oil. Smash the garlic with your knife. Fry until it gains color and becomes aromatic.
- Using the same pan, sauté the seasoned pork. When the pork has gained color, add the seasoned chicken. Season with whole pepper, ground pepper, sautéed garlic, and laurel leaves. Toss.
- Season with vinegar and fish sauce. Cover and let it cook.
- Once it starts simmering, add the chicken liver. Toss. Leave it to cook.
