This festive rice dish with Spanish origin is both flavorful and delicious! Perfect pang-handa sa fiesta!
Ingredients:
Set A:
- 4 cups glutinous rice
- 4 cups water or chicken broth
- 1 teaspoon salt
- 4 tablespoons cooking oil
Set B:
- 2 tablespoons cooking oil
- 4 cloves garlic, minced
- 1 piece white onion, chopped
- 1 piece chorizo de Macao or Bilbao, sliced diagonally
- 500 grams chicken fillets or 1 kilo chicken (bone-in), seasoned with salt
- 1 teaspoon turmeric powder
- ¼ cup tomato sauce
- 4 tablespoons fish sauce, to taste
- ½ teaspoon ground black pepper
- ½ cup raisins (optional)
- 3 cups coconut cream (from 2 pcs. coconuts)
- ½ cup green peas
- 1 piece red bell pepper, diced
