Arroz Valenciana

Ingredients
  

For the Rice:

  • 4 cups malagkit rice, soaked
  • 1 cup water
  • 1 tsp. turmeric powder

For Sautéing:

  • Oil, for sauteing
  • ¼ cup onions, minced
  • 5 cloves garlic, minced
  • ¼ kg. pork, diced
  • ¼ kg. chicken, diced
  • 1 pc. Chinese sausage, sliced
  • 3 - 4 pcs. laurel leaves
  • Salt and pepper, to taste
  • ¼ cup raisins
  • 3 Tbsps. tomato paste
  • 150 g. chicken liver

Chicken Stock:

  • 4 cups boiling water
  • 1 pack Maggi Magic Chicken Cube

For the Seasoning:

  • Fish sauce, to taste

To Add and Garnish:

  • 1 pc. red bell pepper, diced (set some aside for garnish)
  • 1 pc. green bell pepper, diced (set some aside for garnish)
  • 1 cup green peas (set some aside for garnish)

For the Toppings:

  • 5 pcs. hard-boiled egg

Instructions
 

  • Rinse the rice. Let it soak it in the water mixed with turmeric and yellow ginger for at least 1 hour.
  • In a pan, heat the oil. Sauté the onions, garlic, pork, chicken, and spanish sausage. Season with laurel leaves, salt, and pepper. Add the raisins.
  • In a pot with hot water, season with Maggi Magic Chicken Cube.
  • Add tomato paste and chicken liver to the pan. Once all the ingredients have been fully incorporated with each other, add the soaked glutinous rice. Mix. Add the chicken stock. Season with fish sauce.
  • Dice the red and green bell peppers. Add it to the pan along with the green peas.
  • Cover and let it cook slowly so everything cooks evenly.
  • Heat the banana leaves. Cut it to fit the baking pan. Trim off the excess.
  • In a sauté pan, heat the oil. Sauté the green peas, red bell peppers, and green bell peppers. Once cooked, transfer it to bowl. Have hard-boiled eggs ready on the side as well.
  • Once the rice is cooked and most of the broth has been absorbed, transfer it to the baking dish lined with a banana leaf. Flatten it. Top with the sautéed green peas, red bell peppers, and green bell peppers. Slice the hard-boiled eggs and place them on top as well.
