Baked Tahong

Ingredients
  

Set A:

  • 2 cloves garlic, minced
  • 1 Tbsp. butter
  • 1 can evaporated milk (370 mL)
  • 1 or 2 cup or pcs. grated quickmelt cheese or red eggs chopped finely with 1 Tbsp. cornstarch

Set B:

  • 1/2 kg. tahong (mussels), cleaned
  • Chopped spring onion

Instructions
 

  • In a pot with boiling water, put the tahong in. Leave it to simmer for 5 - 7 minutes until all the shells open up.
  • When it has finished simmering, transfer the tahong into a bowl with iced water.
  • Once the tahong has cooled enough to touch, discard the side of the shell without the meat.
  • Prepare the cheese sauce. In a pot, melt the butter. Sauté the garlic. Add the evaporated milk and cheese. Season with patis and black pepper. Mix and cook until it thickens.
  • Clean the tahong by cutting the dirty parts off. Place them on a baking tray with a wire rack.
  • Pour the cheese sauce on the tahong.
  • Place the tray in a preheated oven. Bake it for 3 - 4 minutes.
  • Prepare the garlic butter. In a pot, melt the butter. Add the garlic.
  • When the tahong is cooked, remove it from the oven. Drizzle the garlic butter over the tahong.

Buy all the tahong you want because one serving of Baked Tahong might not be enough due to how delicious this recipe is. Make sure to savor every bit of the shellfish as its deliciousness may only last for the day depending on its availability or how expensive a kilo of mussels has become.
