A classic soft and tasty loaf made with overripe bananas and a sprinkle of cinnamon to make it more fragrant. Throw in nuts or dried fruits, or even swirl in a bit of cheesecake batter. Feel free to play around with this recipe.

INGREDIENTS:
Set A:
1 1/2 cups all-purpose flour
1 tsp. baking soda
1 tsp. cinnamon powder
1 tsp. salt
3/4 cup walnuts or raisins (optional)

Set B:
1 cup brown sugar
1/3 cup palm oil
2 whole eggs
1 1/2 cups mashed overripe bananas
1 tsp. vanilla extract

PROCEDURE:
A. Sift the Set A ingredients into a bowl and mix. Add the walnuts.

B. In a separate bowl, combine Set B ingredients and mix until frothy and sugar is dissolved. Add in Set A mixture and mix until just combined. Pour into a greased, parchment-lined loaf pan, then bake. To check doneness, insert a toothpick to check if it comes out clean.
