Make a soft dessert that melts in your mouth by following this sugary Brazo de Mercedes recipe. With the parts that need more effort being the creation of the meringue and yema spread, since they need to be mixed constantly to attain the best results.
To make the finest meringue for this recipe, you have to ensure that the egg whites are not stained by even a single drop of egg yolk. They have to be pure, so it froths up beautifully and becomes this fluffy meringue that will hug the yema spread within it.
Brazo De Mercedes
Ingredients
For the Meringue:
- ¾ cup white sugar
- 1 tsp. cornstarch
Meringue:
- 8 pcs. egg whites
- ¼ tsp. cream of tartar
Yema Spread:
- 8 pcs. egg yolks
- 1 cup condensed milk
- 1 tsp. lemon zest
- 1 tsp. vanilla extract
- ¼ tsp. salt
- 2 Tbsps. unsalted butter
For Dusting:
- Powder sugar, for dusting
Instructions
- Separate the egg whites from the egg yolks.
- Place the egg yolks in the pot. Add the consensed milk and salt. Mix everything together, then add the lemon zest. Turn on the heat. Make sure to stir consistently until it starts to thicken.
- When the custard has thickened, add the butter. Mix until smooth. Once cooked, let it rest.
- Transfer the yema spread to a bowl. Cover it with plastic wrap. Make sure the top of the custard is flat by pressing down on it with the help of the plastic wrap. Leave it to chill.
- In a bowl, combine white sugar and cornstarch.
- Place the egg whites in the mixing bowl. Add the cream of tartar. Start at slow speed, then increase it to medium speed.
- Preheat the oven to 160 °C.
- When the egg whites begin to froth, add the sugar-cornstarch mixture into the mixing bowl. Beat until you achieve stiff peaks.
- Line the baking pan with wax paper. You can place some of the meringue mixture under the wax paper to ensure that it sticks and stays in place. Transfer the meringue onto the baking pan. Flatten the meringue, then create a design with your fork. Make sure you also trim off the excess wax paper.
- Place the baking pan in the oven. Bake it for 20 to 25 minutes, until it becomes slightly brown.
- Once the meringue is golden, remove it from the oven.
- With the sifter, dust the top of the meringue with powdered sugar. Cover it with another wax paper. Flip, then gently peel off the wax paper.
- Soften the yema spread by beating it first. Once it has softened, scoop an ample amount and spread it on the meringue. Roll it. Be gentle, and make sure you roll it while the meringue is still hot. Let it rest, until it sets.
- Transfer it to a plate. Make sure to be gentle. Dust more powdered sugar on it.
