When the days grow cold because of heavy rain and continuous typhoons, the best way to relax is to cook a pot of freshly cooked Ginataang Mais for the whole family to enjoy. No matter how stressed you and your loved ones become because of the uncontrollable happenings, at least you have a sweet treat to savor together.

With the chewy glutinous rice that has been cooked to perfection, the sweetness of the sugar that has seeped into the coconut cream sauce, and the burst of juiciness from the corn kernels–this dessert will surely become a favored delight because of how delicious each bite is.

Ginataang Mais

Ingredients
  

  • 1 cup malagkit rice
  • 3 cups coconut milk
  • 1 tsp. salt
  • ½ cup corn kernels
  • 4 Tbsps. brown sugar
  • 3 cups coconut cream

Instructions
 

  • In a pot, add the glutinous rice. Make sure to wash it. Pour in the coconut milk. Mix. Turn on the heat, cover, and let it cook.
  • When it starts boiling, sprinkle in salt. Add in the corn kernels. Stir continuously until it thickens.
  • Once it has thickened, add in the sugar. Mix.
  • When the sugar has dissolved, pour in the coconut cream. Stir.

Different from the more commonly seen desserts at restaurants and bakeries, this Ginataang Mais has to be enjoyed with the help of a spoon. Though it can be eaten with a fork because of its creaminess, you might enjoy the experience more if you are able to scoop up every drop without it slipping through the cracks.
