Burger patties are simple to make yet absolutely delicious. All you need is ground meat, along with the various ingredients you want to add to the patty, and to form it into the desired shape before cooking to perfection.

Slurp the homemade udon noodles that you can now make in the comfort of your own home with the help of this recipe. Savor the savory sauce that coats the noodles that were cooked to perfection, and enjoy the mouthwatering combination of the creamy noodles and juicy patties.

Hambagu Udon

Ingredients
  

Udon:

  • 400 g. all-purpose flour
  • 220 g. water
  • 1 tsp. salt

Meat Mixture:

  • 600 g. beef chuck
  • 1/2 cup onion, minced
  • 400 g. bacon
  • 1 tsp. garlic powder
  • 4 Tbsps. Japanese soy sauce
  • 1/2 tsp. baking soda
  • Salt and pepper

Binder:

  • 1 cup breadcrumbs
  • 2 pcs. egg
  • 1/2 cup cream

For the Udon Noodles:

  • Potato starch, for rolling and dusting
  • Water, for blanching

For the Patties:

  • Oil, for frying

Sauce:

  • 3 Tbsps. butter
  • 1/4 cup mushrooms
  • 3/4 cup cream
  • 1 Tbsp. oyster sauce
  • 4 Tbsps. parmesan cheese, grated
  • Black pepper

Garnish:

  • Barbecue sauce
  • Dried parsley
  • Bonito flakes

Instructions
 

  • Start with preparing the udon noodles. In a mixing bowl, add the all-purpose flour, water, and salt. Put it in the stand mixer with the hook attachment. Mix until the dough comes together.
  • When the dough has formed, wrap it using plastic wrap and leave it to rest.
  • Using a meat grinder, grind the beef, onion, and bacon.
  • Make the binder. In a bowl, mix the breadcrumbs, eggs, and cream.
  • Transfer the ground meat mixture into a mixing bowl. Make sure it is properly chilled. Season with garlic powder, Japanese soy sauce, and baking powder. Put it in the stand mixer with the hook attachment. Mix until it all comes together.
  • Once the ground meat mixture has been fully incorporated with each other, pour in the binder. Season with black pepper and salt. Mix until everything is combined. Make sure to stop every now and then to scrape the mixture off the sides and bottom.
  • When the binder has been fully incorporated in the ground meat mixture, start molding it into the desired shape. Scoop and press it into the mold, then place it on a tray lined with wax paper.
  • Once you have enough molded ground meat mixture, with clean hands, shape them into patties. When they have all been turned into patties, let it rest in the chiller.
  • Coat the dough with potato starch and flatten it out with the help of a pasta maker. When the dough has been fattened to the desired thickness, cut it into the desired length. Dust it with more potato starch, roll it into a log, and cut it into thick strips. Toss.
  • In a pot, heat the water. Season with salt. When the water is boiling, cook the udon noodles. Leave it to cook for 3 - 4 minutes. Once cooked, transfer it into iced water.
  • In a pot, heat the oil. Once hot, fry the patties.
  • In a pan, heat the butter. Sauté the mushroom. Add the cream, oyster sauce, and cheese. Mix it all together, then add the udon noodles. Toss. Season with black pepper.
  • When the udon noodles are cooked, arrange it on a plate. Garnish with black pepper.
  • When the patty is cooked, let it rest first. After it has rested, place barbecue sauce on top. Spread it evenly, then place the patty on top of the udon noodles. Garnish with dried parsley and top with bonito flakes.
