With two kinds of sauces within this Lasagna recipe, you won’t be overwhelmed with the savoriness of the meat sauce as it is balanced with the creaminess of the white sauce. Combining meaty with milky creates a flavor profile that will make you grab another slice, or maybe even savor the entire dish all by yourself.

While the process of creating two sauces, along with assembling the dish, may be time-consuming, the delight that it brings with every bite makes the effort worth it. This can be a meal for when you have a slow day, allowing you to relax as you go through each vital procedure.

Lasagna

Ingredients
  

White Sauce:

  • ¼ cup butter
  • ¼ cup flour
  • 4 cups milk
  • 2 pcs. laurel leaf
  • 1 whole onion
  • 1 tsp. nutmeg powder
  • ½ tsp. salt
  • ½ tsp. ground white pepper
  • 1 cup cheddar
  • 4 Tbsps. parmesan cheese

Instructions
 

  • In a pan, melt the butter. Once the butter has melted, add the flour. Make sure to keep on mixing until they have fully incorporated with each other. Add the garlic. Cook it for at least 1 minute or until the color has darkened. You have to ensure that the flour is cooked.
  • When the roux has been made, pour in the milk little by little while mixing constantly. Once you gain a paste-like consistency, replace the spatula with a whisk. Whisk in the rest of the milk.
  • Add the laurel leaf and onion. Season with nutmeg, salt, and white pepper. Once they have been fully incorporated in the sauce, add the cheddar. Mix it all together. When the cheddar has melted, add in the parmesan cheese.

Meat Sauce:

Set A:

  • 2 Tbsps. oil
  • 2 Tbsps. butter
  • 1 cup onion
  • ¾ cup carrot
  • ½ cup celery
  • ¾ kg. ground beef
  • 3 Tbsps. tomato paste
  • 2 pcs. laurel leaf
  • 1 tsp. dried oregano
  • ½ tsp. dried thyme
  • Chili flakes (optional)

Set B:

  • 2 cans tomatoes
  • 4 cups beef stock
  • 2 Tbsps. vinegar
  • 2 Tbsps. sugar
  • 4 Tbsps. fish sauce
  • Salt and pepper, to taste

Set C:

  • 1 cup full cream milk
  • ¼ cup parmesan cheese

Instructions
 

  • In a pot or pressure cooker, heat the olive oil and butter. Sauté the carrots, celery, onion, and garlic until they become tender. Add oregano and thyme.
  • When the vegetables have become tender, add the ground beef. Stir.
  • Once the ground beef is partially cooked, add the tomato paste and sugar. Mix.
  • When the sugar has melted, add the laurel leaves, chili flakes, fish sauce, and vinegar. Mix.
  • Once everything has been fully incorporated with each other, add the tomatoes and beef stock. Cover and let it cook for 45 minutes to 1 hour.
  • Check on your sauce after the time has passed. Add the cooking cream and parmesan cheese. Season with black pepper. Let it simmer for 10 - 15 minutes.

Lasagna

Ingredients
  

For Assembling:

  • Cooked pasta
  • 1 cup cheddar cheese
  • 2 Tbsps. parsley

Instructions
 

  • Cook the lasagna noodles for 6 - 7 minutes.
  • In a baking dish, place the first layer of meat sauce, then a layer of lasagna noodles, followed by the white sauce. Top with mozzarella and cheddar cheese before repeating the process all over again until you have filled the baking dish.
  • Once the entire baking dish has been filled, sprinkle on fresh parsley and drizzle a bit of olive oil on top.
  • Bake it for 30 minutes at 160 °C.
