Lumpiang Sariwa
Ingredients
For Boiling:
- 1 kg. fresh ubod
- Boiling water
- Season with salt
Filling:
- 1 pc. carrots, julienned
- 1 pc. white onion, minced
- ¼ kg. pork giniling
- ½ cup shrimp, diced
- ¼ cup water
- 1 sachet Maggi Magic Sarap
- Season with black pepper
Wrapper:
- ½ cup flour
- ½ cup cornstarch
- 4 Tbsps. sugar
- 1 tsp. salt
- 8 whole eggs
- 4 Tbsps. oil
- 1 cup water
- 1 cup fresh milk
Sauce:
- 2 whole garlic
- 1 ½ cup brown sugar
- 1 cup water
- 2 Tbsps. peanut butter
- 1 Tbsp. soy sauce
- 1 Tbsp. oyster sauce
- ¼ cup milk
Garnish:
- Peanut, chopped
Instructions
- In a pot of boiling water seasoned with salt, boil the ubod ng niyog until it softens.
- In a bowl, sift the all-purpose flour, cornstarch, sugar, and salt in.
- In a separate bowl, crack in the eggs. Beat. Add the oil, then mix. Pour in the water and milk, then combine it with the flour mixture. Make sure to pour the mixture through a sift so there are no lumps and it is smooth. Let it rest.
- Spread a layer of oil on a hot pan. Pour in the mixture, then swirl it around so it coats the pan. When the batter has dried up, you will know it is cooked. Once cooked, remove it from the pan and place it in on a plate. Continue until all the batter mixture has been cooked.
- When the ubod ng niyog has become tender and is cooked perfectly, remove it from the pot and leave it to cool. Once it has cooled, julienne it. Make sure to cut it against the grain.
- Julienne the carrot. Dice the onion. Chop the shrimp.
- In a pan, heat the oil. Sauté the onion and ground pork. Once the pork has gained color, add the carrot and boiled ubod. Mix, then pour in water. Season with Maggi Magic Sarap and salt. Mix, then leave it to cook.
- In a bowl, mix water and cornstarch to make a slurry. Pour it into the pan. Toss it all together, then add the shrimp. Season with black pepper. Toss.
- Transfer it to the colander so it cools faster and the excess juice drips off.
- Smash the garlic. In a food processor or by hand, mince the garlic.
- In a pot, add the brown sugar, cornstarch, and water. Mix it all together. Once the cornstarch has dissolved, add peanut butter, soy sauce, oyster sauce, milk, and minced garlic.
- In a food processor, grind the peanuts for garnish.
- On a plate, lay a piece of wrapper. Place the lettuce in the center, scoop an ample amount of the filling onto it, then fold it neatly. Pour the sauce over it. Garnish with crushed peanuts and garlic.
