Traditionally of Spanish origins, this dish has transformed from a Catalan recipe of beef stomach and spices into a popular fiesta pork dish, each region around the country has its own version.
Here is a version from the Tagalog province of Bulacan.
Ingredients:
Set A:
1 kilo pork
¼ cup soy sauce
4 tablespoons vinegar
Set B:
¼ kilo pork liver
2 tablespoons salt
1 cup water
Set C:
oil
3 cloves garlic
1 piece onion
5 pieces tomatoes
1 tablespoon sugar
2 tablespoons annatto oil
3 pieces laurel leaves
black pepper
1 cup water
1 piece carrot
1 cup potatoes
1 cup garbanzos
1 piece red bell pepper
