Compared to eating rice in its plain state, prepare it as a Paella and experience the delight that rice can bring when handled in a uniquely delicious way. With the added flavor profile of poultry and seafood, it becomes a flavor bomb with every bite.

Mixing all these ingredients to create a mouthwatering stock and cooking the rice in it, creates a dish that will surely be the highlight of mealtime. While it may take time to perfect the method to cook this perfectly, the resulting dish will definitely be worth your time and effort.

Paella

Ingredients
  

Set A:

  • ¼ kg. chicken thigh
  • 1 Tbsp. lemon
  • Pepper, to taste

Set B:

  • ¼ cup olive oil
  • 4 cloves garlic
  • ½ cup onion
  • ½ red bell pepper
  • ½ green bell pepper
  • 1 tsp. dried basil
  • 1 tsp. thyme
  • 1 tsp. rosemary
  • 1 tsp. turmerkic or saffron
  • ½ cup tomato
  • 2 tsps. sugar
  • 2 cups Japanese rice
  • 6 cups chicken stock
  • Salt, to taste
  • Fish sauce, to taste

Set C:

  • 1 cup clams
  • 1 cup fresh shrimps
  • 2 pcs. squid
  • ½ cup red bell pepper
  • ½ cup green bell pepper
  • ½ cup green peas

Set D:

  • 1 Tbsp. parsley
  • 1 pc. lemon wedges

Instructions
 

  • Prepare the chicken stock beforehand. Take the vegetable trimmings and the chicken bones. Boil until you get a flavorful stock.
  • Season the chicken with salt and pepper. Add lemon. Mix it all together.
  • In a paellera, heat the olive oil. Sear the chicken. Once the chicken has been seared, remove it from the paellera.
  • Using the same paellera, sauté the shrimp heads and shrimp. Season with salt. Once cooked, remove it from the paellera. Mash the shrimp heads to extract all its juice. When you have managed to get all the flavor it can offer, remove the shrimp heads from the paellera.
  • Pour more olive oil in the paellera. Sauté the onion, garlic, and red bell pepper. Season with salt. Once the aromatics have softened, add the dried basil, thyme, and rosemary. Stir, then add turmeric. Mix.
  • Once all the aromatics and herbs have fully incorporated with each other, add the tomatoes. Season with sugar.
  • When the sugar has dissolved, pour in the rice. Toss it all together to it is coated in the sauce. Spread it out evenly on the paellera and pour in the chicken stock. Stir so the rice is covered in the stock and evenly distributed across the paellera. Leave it to cook.
  • Season with fish sauce. Mix lightly so the flavor is spread evenly.
  • Arrange the chicken and clams on top. Season with black pepper, then arrange the bell peppers as well. Lower the heat, then add the shrimps and squid. Pour in the green peas.
  • Chop the parsley and garnish the Paella with it.
  • Once cooked, turn off the heat and let it rest. Top it with hard-boiled eggs and a lemon wedge.
