- 1 cup water
- 1 tsp. salt
- 2 Tbsps. sesame seeds
- 1/4 cup sugar
- Buko pandan flavoring
- Ube flavoring
- 3 cups boiling water
For the Topping:
- 1 cup shredded coconut
- 1/4 cup sugar
- 2 Tbsps. sesame seeds
Instructions
- Toast the sesame seeds until it gains color and its aroma comes out. Once it has been toasted, transfer it to a bowl. Set aside.
- While toasting the sesame seeds, boil water in a pot.
- In a bowl, mix the glutinous rice flour and water into a dough-like consistency. When it has turned into a dough, separate it into three parts.
- Into one part of the dough, add Buko Pandan essence. Mix well. Set aside.
- Into another part of the dough, add Ube flavoring. Mix well. Set aside.
- Add salt into the boiling water.
- Wet your hands and grab a portion of the dough. Roll it into a ball, then flatten it with your fingers. After it has been formed into the desired shape, drop it into the boiling water. Continue making dough and placing it into the boiling water until all the dough has been used.
- In a bowl, combine sugar and sesame seeds. Mix, then set aside.
- When the palitaw is floating on the water, it is cooked. Scoop it out of the water and roll it in the shredded coconut, then arrange it on a plate. Continue doing this until all the palitaw is cooked.
Once it floats, the Palitaw has finished cooking and is ready to be coated in chewy shredded coconut, crisp toasted sesame seeds, and sugary sweetness. The stickiness of the glutinous rice flour will cling to you with every bite, making the flavor of this sweet treat accompany you throughout the whole day.
