Serves 4 to 5.
INGREDIENTS:
Set A:
- 300 grams pork kasim or belly
- 10 cups water
- 1 tablespoon salt
- 1/4 kilogram pancit luglug
- 1 tablespoon cooking oil
Set B:
- 1 cup shrimps
- 1/4 kilogram mussels
Set C:
- 1/2 cup annatto seeds
- Shrimp heads (from Set B), pounded
- Tinapa (smoked fish), head, scales and bones removed
Set D:
- 4 tablespoons cooking oil
- 1 tablespoon garlic, minced
- 1 piece onion, minced
- 6 cups pork and seafood stock
- 1/2 cup cornstarch or rice flour, dissolve in water
- Fish sauce and black pepper to taste
Set E (Toppings):
- Fried firm tofu (tokwa), cubed
- Fried pork pieces
- 1/2 cup tinapa flakes
- 1/2 cup mussels, shelled
- 1 cup cooked shrimps
- 1 cup chicharon, crushed
- 3 hard-boiled eggs, sliced
For the garnish:
- Chopped spring onion or leeks
- Cilantro
- Fried Garlic
- Calamansi
