Pinaupong manok literally means seated chicken because of its process. The chicken was seated upright on a palayok. When gas ovens were not yet invented, pinaupong manok was the common way of cooking chicken in the Philippines, especially for special occasions.

INGREDIENTS

Set A:

  • 1 whole chicken
  • 2 tablespoon soy sauce
  • 4 pieces calamansi

Set B:

  • 2 tablespoon rock salt
  • 1 tablespoon whole peppercorn
  • 1/2 cup dried oregano
  • 2 pieces laurel leaves
  • 1 head garlic, peeled
  • 1 large onion
  • 2 stalks lemongrass

Set C:

  • 2 cups salt
  • banana leaf
