Set A:
- 4 pieces chicken leg quarters or 1 kilo assorted chicken cuts
- 4 tablespoons fish sauce
- 1/2 cup vinegar
- 3/4 cups water
- 6 cloves garlic, crushed
- 1 teaspoon whole black pepper
- 4 pieces laurel leaves
Set B:
- Cooking oil, for frying
For the Adobong sili:
Ingredients:
- 1/4 kilo finger chili (siling pansigang)
- 1 head garlic, peeled and chopped
- 1 piece onion, chopped
- 1/2 cup vinegar
- 1/4 cup soy sauce
- 1/2 cup water
- 1 teaspoon sugar (optional)
- 1/2 teaspoon peppercorns, crushed
- 2-3 pieces laurel leaves
- Cooking oil (from fried chicken)
- Salt, to taste
