A new TasteAtlas list has been published. With the inclusion of Sinigang and Bulalo in the list of 50 best soups in the world, it is a reason for a grand celebration. To commend this feat, here are some unique versions of Sinigang and Bulalo recipes cooked by Chef Tatung.
Sinigang sa Pakwan
Ingredients
Set A:
- 1 kg. beef ribs, cut into 2-inch cubes
- 2 pcs. red onion, quartered
- 4 pcs. native tomato, quartered
- 2 L. water
- 4 cups watermelon, peeled, seeded, cut into chunks
Set B:
- 2 pcs. gabi, peeled, cut into cubes
- 1 pc. small radish
- 2 pcs. finger chili
- 1 bundle sitaw (long beans), cut into 2 1/2-inch lengths
- 1 bundle kangkong (water spinach), cut into 2 1/2-inch lengths
- 1 pack tamarind or sinigang powder
- Fish sauce, to taste
Instructions
- In a pan, heat the oil. Sauté the onion, tomato, and beef. Season with salt.
- After sautéing it for a while, add the water and watermelon. Cover and leave it to simmer for 1 hour to 1 hour and 30 minutes.
- Once the beef has become tender, add the gabi, siling pangsigang, and radish. Let it cook for 5 - to minutes, or until the gabi becomes tender.
- When the hard vegetables have softened, add the sitaw, kangkong, and sinigang mix. Season with patis.

Ingredients
Set A (Boil):
- 1 or 1 1/2 kg. beef chuck or bone-in, cut into cubes
- 1 pc. red onion, halved
- 2 pcs. carrot, chopped
- 1 pc. laurel leaf
- 2 stalks celery, chopped
- 1 tsp. whole peppercorns
- 1 Tbsp. salt
- 8 cups lukewarm water
Set B (Boil):
- 6 pcs. medium potato, halved
- 1/4 pc. green cabbage, sliced into wedges
Instructions
- Place the beef, red onion, carrots, laurel leaf, celery, and peppercorns in a pot with lukewarm water. Season with salt, and bring to a boil. Skim off scum that rises to the surface amd turn the heat down to medium, cover the pot, and check occasionally to see if the beef is tender. This may take an hour or so depending on the cut and quality of your beef.
- Add the potatoes and cook for a few minutes before adding the cabbage. Cook for a minute or so and adjust the seasoning. Serve the meat and vegetables separate from the soup with your choice of condiment on the side.
Pork Sinigang with Langka
Ingredients
- 1 kg. pork belly, cut into serving pieces
- 5 - 6 cups water
- 1 pc. medium red onion, cut into quarters
- 4 pcs. tomato, cut into quarters
- 1 or 2 pc. or cups large langka
- 1 pc. medium radish, peeled, sliced
- 2 - 3 pcs. finger chili (siling pangsigang)
- Fish sauce, to taste
- 1 bunch kangkong (water spinach), leaves and tender stalks separated
- 1 cup tamarind paste (3/4 cup water for 5 pcs. tamarind)
Instructions
- In a pot with water, add the pork, onion, tomato, and langka. Season with patis. Cover and leave it to cook for 20 minutes.
- In another pot with water, put the fresh sampaloc in and let it boil until it becomes tender. Once it has softened, mash and strain it.
- When the pork has softened, add the radish and sili pangsigang. Let it cook for 1 minute.
- Once the radish has softened, add the kangkong and fresh sampaloc pulp.
