Spaghetti has always been a crowd favorite. Present in most important occasions and celebrations, it brings numerous cherished memories. With its constant presence as a part of Filipino parties, this dish will always be familiar. However, this recipe deviates from the spaghetti that we know and love.

Different from the sweet Filipino spaghetti that uses banana catsup and hotdogs, this Spaghetti Bolognese recipe is one with a more complex flavor profile. The richness of sweet tangy tomatoes and the meaty flavor jive well with the herbs and spices used in the sauce, bringing out the fragrance of both ground pork and ground beef. With all the diced vegetables softened and mixed into the sauce, it can be said to be healthier than the version you love most.

Spaghetti Bolognese

Ingredients
  

  • Oil, for sautéing
  • 3 Tbsps. butter
  • 250 g. ground pork
  • 250 g. ground beef
  • 3 Tbsps. flour
  • Salt, to taste

For the Sauce:

  • 5 cloves garlic, minced
  • 1 cup onion, minced
  • 1/2 cup carrot
  • 1/2 cup celery
  • 1/2 cup red bell pepper
  • 1 tsp. dried oregano
  • 1 tsp. dried basil
  • 3 pcs. laurel leaf
  • 1 tsp. chili flakes
  • 1/4 cup tomato paste
  • 2 Tbsps. sugar
  • 4 Tbsps. Maggi Magic Savor
  • 3 or 4 cans or cups canned tomato
  • 2 cups water
  • 2 pcs. Maggi Magic Chicken Cube
  • Fish sauce and black pepper, to taste

To Serve:

  • Spaghetti pasta
  • Olive Oil
  • Chopped fresh parsley

Instructions
 

  • In a pan, heat the oil and add butter. Sauté ground pork and ground beef. Add flour to let it absorb the juices released by the meats. Season with salt. Leave it to brown. Toss it after leaving it to cook for a while. Repeat the process of flattening it, leaving it to brown, and tossing it until it is fully cooked.
  • Once the meats have gotten a good sear, add the garlic, onion, carrot, celery, and red bell pepper. Season with dried oregano, dried basil, laurel leaves, and chili flakes. Mix everything together.
  • Add tomato paste and sugar. Mix well.
  • Once the tomato paste and sugar are fully incorporated, add Maggi Savor. Pour in the canned tomatoes, water, and Maggi Magic Chicken Cubes. Mix, then cover and let it simmer for 15 – 20 minutes. Make sure to stir it every now and then.
  • After letting it simmer, season it with patis and black pepper. Finish with olive oil, then sprinkle on the parmesan cheese.  Top with chopped parsley.

With a totally different flavor profile, this dish will be able to let you and your family experience the incredible sharpness of spiced meat sauce on the familiar spaghetti noodles. The difference that becomes apparent in the first bite will leave you in awe because despite carrying the Spaghetti name, it is uniquely distinct from the local Spaghetti we grew up with.
