Rather than having to leave the comfort of your home to buy pandesal and a loaf of bread, bake your own pandesal and loaf in the comfort of your kitchen. While this may not be the basic bread recipe, it will pave the way to learning how to make it, along with the knowledge that you can experiment with the flavor of your bread.

Ube Pandesal

Ingredients
  

Ube Dough:

  • 2 ¼ cup water
  • 1 Tbsp. instant yeast
  • 1 pc. whole egg
  • 1 cup milk
  • 5 cups flour
  • 1 cup sugar
  • cup ube halaya
  • 1 Tbsp. violet food color
  • 4 Tbsps. butter

For Dusting, Coating, and Filling:

  • Flour, for dusting
  • Breadcrumbs, for coating
  • Regular cheese, for filling

Instructions
 

  • In a mixing bowl, combine lukewarm water, yeast, egg, milk, and all-purpose flour. Turn on the stand mixer. Make sure to start slow, and while the ingredients are being mixed into a dough, add the sugar.
  • When the dough is no longer sticking to the bowl, stop the stand mixer. Let the dough rest for around 10 minutes.
  • Once the dough has rested, add the ube jam, ube flavoring, and softened butter. Turn on the stand mixer and make sure to start slow. Mix until everything is well incorporated and the dough no longer sticks to the bowl. Cover and let it rest for 1 hour or until it doubles in size.
  • After the dough has rested or has doubled in size, dust your work surface with flour. Roll your dough into a ball. Cut it into half, then roll it into a log before dividing it into smaller pieces. Shape each divided piece into a ball.
  • Cut the cheese into cubes. Stuff the cheese into the dough, then coat the stuffed ube dough in breadcrumbs. Leave it to rise.
  • Once the Ube Pandesal has risen to double its size, place it in the oven and bake.

Ube Loaf

Ingredients
  

For Filling:

  • Ube Halaya, for filling

Egg Wash:

  • 1 pc. egg
  • ¼ cup milk
  • ¼ tsp. salt

For Brushing:

  • Maple syrup / corn syrup

For Topping:

  • Grated cheese

Instructions
 

  • Dust your work surface with flour, roll the dough out evenly into a rectangular that is around 24 x 18 inches.
  • Spread the ube halaya on the dough. Roll it into a log carefully. After rolling it, cut the loaf in the middle and braid it. Place it in a loaf pan greased with butter. Leave it to rise for at least 30 - 45 minutes or until it doubles in size.
  • In a bowl, beat the egg and season with salt. Add the evaporated milk. Mix it all together, then brush it onto the Ube Loaf.
  • Place the Ube Loaf in the oven and bake. It will take around 50 minutes.
  • Once the Ube Loaf has finished baking, brush it with honey and top it with grated cheese.
