Bibingka

Ingredients
  

  • 2 cups rice flour
  • ¾ cups white sugar
  • ½ tsp. salt
  • 4 pcs. egg
  • 1 cup fresh milk
  • ¼ cup melted butter
  • Banana leaves

Toppings:

  • Cheese
  • Salted egg

Instructions
 

  • In a pot, melt the unsalted butter.
  • In a bowl, add the rice flour, white sugar, baking powder, and salt. Mix.
  • In a separate bowl, add the eggs. Beat it, then pour it into the milk. Mix well. Add the melted butter.
  • Pour the wet ingredients into the bowl of dry ingredients. Mix until it is fully combined.
  • Pass the mixture through a strainer as you transfer it to another bowl.
  • Prepare the bibingka molds. Line it with a banana leaf, scoop an ample amount of the mixture and pour it into the mold. Add some cheese and salted egg. Place it in the oven and bake it for 12 - 15 minutes.
  • Once it has finished baking, brush it with melted butter. Top it with sugar and salted butter. Serve with shredded coconut and muscovado sugar on the side.
