This deep-fried shrimp dish is very delicious and flavorful and best served with sweet chili sauce! Watch the video below so you can easily recreate this recipe at home!

Serves 3 to 5. 

INGREDIENTS:

Set A:

  • 1/2 kilogram ground pork (with at least 20% fat)
  • 1/2 cup prawns, chopped 
  • 1 teaspoon salt
  • 2 tablespoons oyster sauce
  • 1 egg
  • 1 tablespoon sugar
  • 1 piece onion, chopped 
  • 6 tablespoons flour
  • ½ cup carrots, grated 
  • ½ cup radish, grated
  • 2 tablespoons dried shiitake mushrooms, rehydrated and chopped (optional)
  • 1 teaspoon five-spice powder (optional)

Set B: 

  • 8-10 pieces shrimp, shelled and deveined, tail-on
  • Salt, for seasoning shrimps and flour
  • 6 tablespoons flour, for dredging 

Set C (Breading): 

  • 2 eggs
  • 1 ½ cups breadcrumbs
  • Salt
  • Cooking Oil

Chef Tatung’s Tips: 

  • Make sure that pork is properly chilled before starting. 
  • The shrimps should be moist and juicy.
  • The batter should be light and crisp — thick enough to coat the shrimps but thin enough to let you see the natural color of the shrimps by looking at the tail. 
  • Wet the hand in a little water so that the meat mixture will not stick in our hands when handled.
