Sinigang is a familiar household staple that brings warmth with every sip and makes you dance with delight because of the savory tang of the fresh tamarind. This recognizable dish can have multiple variations that range from pork and beef to an assortment of seafood choices.

With salmon head, this delightful dish has become even healthier, and the added flavor that salmon adds to the broth is exquisite.

Sinigang na Ulo ng Salmon sa Miso

Ingredients
  

Aromatics:

  • Oil, for sautéing
  • 4 thumbs ginger
  • 2 pcs. tomato, sliced
  • 2 pcs. onion, sliced
  • Salt

For the Soup:

  • 120 g. miso paste
  • 3 L. water
  • 1 pc. raddish, sliced
  • 7 pcs. okra
  • 2 pcs. green chili
  • 1 pack Maggi Magic Sarap
  • 1.5 kg. salmon head
  • 1 bunch mustard leaves

Seasoning:

  • 4 Tbsps. tamarind powder
  • Fish sauce, to taste

Instructions
 

  • Prepare the aromatics. Slice the tomato, ginger, and onion.
  • In a pan, heat the oil. Sauté the onion and ginger. When the onion has become translucent, add the tomato. Toss them together, then add the miso paste. Make sure to mash and mix the miso paste so it can be fully incorporated with the aromatics.
  • After mashing and mixing the miso paste, once it has melted into a more pasty state, pour the water in the pan.
  • Prepare the vegetables. Cut the radish and add it into the soup. Cover and leave it to cook. Trim the head of the okra, then remove the stems of the green chili and score it.
  • Remove the lid and mix soup. Season with Maggi Magic Sarap.
  • Once the soup starts simmering, add the salmon head. Cover and wait for it to cook.
  • When the salmon head is halfway cooked, add the green chili and okra. Press it down so it gets submerged in the soup. Cover and let it cook.
  • Once the green chili and okra have softened, add the mustasa leaves. Pour the Sinigang powder mix in and stir it into the soup. Season with patis.
