It is the season of holidays, reunions, and the long-awaited get-together. Everyone is going to be present and it is the perfect time to showcase your cooking skills. Well, worry not about your budget because we have three dishes chosen especially for you which has ingredients that will amount to Php. 5000 or less.
1. Morcon (Dishkarte, p. 219)
This dish is a thin slice of marinated beef wrapped around carefully sliced hotdog, pickles, carrots, and boiled egg. Then after the marinated beef has been stuffed, it’s tied up with a cooking string (or otherwise known as kitchen twine), then seared until brown. After which, the sauce is prepared in the same pan the marinated beef was seared in, mixing the simmering sauce with the flavors left behind by the seared beef.

MORCON
INGREDIENTS
Set A:
· 1 kg beef, top round part
· 3/4 cup Datu Puti Soy Sauce
· 1 tsp. UFC Cracked Black Pepper
· 6 pcs. Calamansi
Set B:
· hotdog
· pickles
· carrots
· boiled egg
Set C:
· Golden Fiesta Canola Oil, for sautéing
· 4 cloves garlic, minced
· 1 pc. White onion, minced
· 3 pcs. UFC Laurel Leaves
· 1 tsp. dried basil
· 1 tsp. dried oregano
· 1 tsp. paprika
· 2 cups ripe tomatoes, diced or canned tomato
· 5 cups water
· 2 packs Silver Swan Wow Sarap All-In-One Seasoning
· 3 Tbsps. brown sugar
· 1/4 cup black olives
· Datu Puti Patis, to taste
· UFC Ground Black Pepper, to taste
PROCEDURE
a. Marinade the beef in soy sauce, calamansi, and black pepper for 30 to 60 minutes.
b. Slice the filling that you will be using. Roll the marinated beef with the sliced filling and then tie it tightly with a kitchen twine. Sear the rolled beef util it turns brown. Set aside.
c. In the same pan, sauté the ingredients except for the black olives, then add in the Morcon as well. Watch over it and keep on turning it over so it cooks evenly. Add the olives last and garnish it with parsley.
2. Grill Happy (Kitchen Secrets, pp. 204-207)
These are marinade choices for your meats. There are a total of 9 options, so feel free to try them all.
But before you start, remember that adding some sort of acid can help tenderize meats, but it can also end up chemically cooking your food if you leave it in the marinade for too long. If you happen to leave your meat in the marinade for too long, it can become denatured which will cause it to firm up, become dry, and turn it chalky like it does to leftover kinilaw.
As for the barbecue sticks, a good tip to keep it from burning during the cooking process is to soak them in water for at least an hour before using it.

ISLAND MARINADE
INGREDIENTS
· 2 Tbsps. melted margarine
· 1/2 cup calamansi juice
· 1 tsp. chili flakes
· 1 tsp. garlic, minced
· ¼ cup patis
· 1 Tbsp. banana ketchup
· 2 Tbsps. brown sugar
SHAWARMA MARINADE
INGREDIENTS
· 2 Tbsps. canola oil
· 1 Tbsp. lemon juice
· 2 cloves garlic, chopped
· 1 pc. cinnamon stick
· 1/2 tsp. nutmeg
· 1 tsp. cardamom
SATAY MARINADE
INGREDIENTS
· 1/2 cup coconut milk
· 2 Tbsps. fish sauce
· 1 tsp. curry powder
· 3 Tbsps. chopped cilantro
KEBAB MARINADE
INGREDIENTS
· 1 cup plain yogurt
· 3 Tbsps. olive oil
· 1 tsp. paprika
· 1 tsp. cumin
· 1 tsp. cinnamon
· 1 Tbsp. lemon juice
AMERICAN-STYLE MARINADE
INGREDIENTS
· 1/2 Tbsp. paprika
· 1/4 cup Worcestershire sauce
· 2 Tbsps. soy sauce
· 1/4 cup honey
· 1/2 Tbsp. chili powder
3. Christmas Cookies (Baking Simpol, p. 89)
This is a light cookie topped with a teaspoon of fruit jam. It’s also a great pair with tea. Compared to the others we suggested, this is more of a snack or a dessert rather than a main course meal ready to fill everybody up.

CHRISTMAS COOKIES
INGREDIENTS
Set A:
· 1 3/4 cups all-purpose flour
· 1/2 cup Peotraco Confectioners’ Powdered Sugar
· 1/4 tsp. salt
Set B:
· 3/4 unsalted butter, at room temperature
· 1/4 cup Peotraco Caster Sugar
· 1 egg white
· 1 tsp. lemon juice
Set C:
· 1/2 Peotraco Caster Sugar
· Strawberry jam or any other fruit jam
PROCEDURE
a. Sift the Set A ingredients into a bowl and mix everything.
b. Beat butter and sugar until fluffy, and sugar is dissolved. Add the rest of the Set B ingredients. Add the Set A mixture and mix until just combined. Do not overmix. Roll into 1 1/2-inch cylinder, then let it chill for 30 minutes. Using a sharp knife, slice into 1/8-inch thick pieces.
c. In a bowl, combine sugar and jam. Make a well in the center of each slice of dough and fill with fruit jam. Arrange on a greased, parchment-lined tray and bake.
Here are three choices for you to choose from. Three dishes with ingredients amounting to P5000 or less. From a main dish, marinades for grilling, and a dessert; the meal could be considered complete with this. We hope you enjoy both your meal and the time you spent with your family this Christmas.
