Having to leave the comfort of your home to enjoy the crisp texture of fried chicken is both tiring and expensive. Not only would you need to drive or walk to the nearest available store for it, but you would also need to spend money on the dish itself before needing to drive back home again. And while it can now be delivered to your home, it does not change the fact that you would need to spend quite a lot, especially since you would need to pay the additional delivery fee.
With the satisfying crunch that comes with every bite, this is a crispy fried chicken that is made available to you and your family in the comfort of your home without needing to spend a lot. While you might need to open your wallet for any missing ingredients, it would still cost less than buying fried chicken outside.
Ingredients:
– 1 whole chicken
– 1 Tbsp. salt
– 1 whole onion
– 1 whole garlic
– 1 Tbsp. whole peppercorn
– 1 stalk onion leeks
– Water, for boiling
– 2 Tbsps. butter
– 1 Tbsp. oil
– â…“ cup flour
– 2 cups chicken stock
– ½ Tbsp. soy sauce
– Season with freshly cracked black pepper
Sides:
– Saging saba
– Oil, for frying
Procedure:
1. Place the chicken on a plate. Add the salt inside and outside the chicken. Rub it evenly.
2. Cut the onion and garlic in half. Stuff it into the chicken. Add the peppercorns. Seal the ends of the chicken with a toothpick. Tuck the wings under the chicken and transfer it into the pot.
3. Add water into the pot, around ¾ full. Add the leeks and peppercorns. Cover and let it cook for 20 minutes. Once the 20 minutes is up, baste the chicken with the broth. Cover again and let it simmer for a few more minutes.
4. When the chicken is par-cooked, remove the chicken from the pot and let it cool overnight.
5. Strain the broth into a bowl. Heat the pot, then add the butter and vegetable oil. Add the flour. Mix until it becomes blond in color. After reaching the desired color, slowly pour in the chicken broth. Make sure to keep stirring so there are no lumps. Add the soy sauce for color. Then add cracked pepper. Mix well.
6. Once the chicken is completely cooled and dry, heat the oil. Start by frying the saba until golden-brown. After frying the saba, place the chicken into the pot of hot oil. Slowly baste your chicken with the oil. After some time, turn the chicken upside down. The chicken will be cooked in 15 – 18 minutes.
7. The chicken will be cooked if oil, not blood, is coming out when you let the excess drip. Let it rest, then serve it with the fried saba and a side of gravy.
You will no longer need to spend your time going to the restaurant to buy fried chicken, then heading back home. While it may get hot in the kitchen because you will need to cook it yourself, mealtime will be even more satisfying as you will be able to enjoy your own homemade fried chicken.
