A filling meal is always the most ideal. With this recipe that makes use of quite a number of eggplants, along with egg and ground pork, being filled beyond satisfaction is not far from reality. Enjoy it with your favorite ketchup and you are in for a delicious homey treat.

With such a huge serving, you will be able to feed the entire family without needing to make use of complex ingredients that could take up more of your time. While it may not seem fancy, the taste will definitely be able to amaze everyone.

Tortang Talong with Giniling

Ingredients
  

  • 4 pcs. eggplant
  • 1 pc. onion, minced
  • 4 cloves garlic, minced
  • 1 pc. tomato
  • 200 g. Premium Choice ground pork
  • 1 Tbsp. Maggi Oyster Sauce
  • 1/4 cup cornstarch
  • 2 Tbsps. water
  • 6 pcs. egg
  • Season with salt and pepper

Salsa:

  • Onion
  • Tomato
  • Spring onion
  • Season with salt and lemon

Instructions
 

  • Poke the eggplant to lessen the chance of it exploding while being grilled. Place the eggplants directly over the fire. Grill until it has softened. Once it has finished grilling, place it in a bowl and cover it with a damp cloth. Let it rest.
  • If there is no direct fire, peel the skin of the eggplant and let it boil in a pot seasoned with salt.
  • While the eggplant is boiling or while letting the eggplant rest, prepare the rest of the ingredients. Mince the onion, garlic, and tomato.
  • In a pan, heat the oil. Sauté the onion, garlic, and tomato. Season with salt. Mix, then add the ground pork. Season with salt, pepper, and Maggi Oyster Sauce. Leave it to cook, while making sure to move it around so everything cooks evenly.
  • Once the ground pork is cooked, transfer it to a bowl. Set aside.
  • Peel the skin off the grilled eggplant. When the boiled eggplant has finished cooking, transfer it to a plate and let it rest.
  • In a bowl, mix cornstarch and water. Mix until the cornstarch is dissolved. When the cornstarch has dissolved, add the eggs. Season with salt and pepper. Beat it all together, then pour a portion of the mixture into the cooked ground pork. Mix.
  • Mash the boiled eggplant to make the base, then chop the grilled eggplant and add it to the base.
  • Once all the eggplants have been mashed together, pour the egg mixture over it.
  • In a pan, heat the oil. Pour the egg mixture, slide the eggplant into the pan, scoop the ground pork mixture, pour the remaining egg mixture over it, then cover and leave it to cook gently.
  • When the tortang talong is ready to flip, remove the cover, place a plate over it, flip, then slide it back into the pan. Let it cook through for 1 - 2 minutes.
  • Check whether it is cooked by pressing on it. When it is firm, that means it is already cooked through. Once cooked, flip it again so the ground pork half is on display.
  • Garnish it with salsa that is made with chopped onion and tomato which is seasoned with salt. If preferred, you can also add spring onions and lemon to the salsa.

Whether you make a gigantic batch that can be served in meaty slices, or cook Tortang Talong for each individual, it will be a delectable treat that can be paired with a fresh batch of salsa or a side of ketchup. Just make sure to serve it while hot, so that everyone can enjoy it at its best.
