Arroz Caldo will always be a well-liked classic that is more often enjoyed during breakfast, but can definitely be savored at any time of the day. With its simple preparation and easily available ingredients, you can cook this dish whenever you want. Just add your condiments of choice to enhance the flavor of the broth, then savor every bite before your day starts.

Experiment with this dish by adding ingredients beyond the classic chicken broth. Try to cook it with seafood or other meats, then have a taste to see if the flavor combination is as delicious as the familiar Arroz Caldo.

Arroz Caldo Two-Ways

Ingredients
  

Rice Mixture:

  • 2 cups regular rice
  • 1 cup malagkit rice

Arroz Caldo:

  • 1/4 cup ginger
  • 1 pc. onion
  • 4 cloves garlic
  • 700 g. chicken leg quarter
  • 1 pc. Maggi Magic Chicken Cubes
  • 6 cups water
  • Add the cooked rice
  • Season with white pepper

Seafood Version:

  • 1 pc. onion
  • 1/4 cup ginger
  • 1 cup squid ball
  • 150 g. shrimp
  • 2 pcs. salted egg
  • 6 cups shrimp heads broth
  • 1 Tbsp. Maggi Oyster Sauce
  • 1 sachet Maggi Magic Sarap
  • Add the cooked rice
  • Season with black pepper

Garnish:

  • Salted egg
  • Fried garlic
  • Hard-boiled egg
  • Calamansi

Instructions
 

  • In a pan, heat the oil. Sauté the ginger, onion, garlic, and chicken. Toss.
  • Prepare the rice ahead of time. Mix rice and malagkit rice together.
  • When the chicken has gained a bit of color, season it with Maggi Magic Chicken Cube. Toss.
  • Once the Maggi Magic Chicken Cube has been fully incorporated, add the water. Cover and leave it to simmer.
  • Julienne the ginger. Chop the onion. Smash the shrimp heads to extract as much flavor from them.
  • In another pan, heat the oil. Sauté the smashed shrimp heads. Once all the flavor from the shrimp heads have been extracted, remove them from the pan.
  • Add the ginger, onion, garlic, and annatto oil to the pan. Toss.
  • In the bowl with the cooked shrimp heads, add water to extract more of their flavor.
  • Crack open a salted egg, scoop the egg out with a spoon, and add it to the pan. Smash it.
  • Strain the shrimp broth from the submerged shrimp heads into the pan. Discard the shrimpo heads, then add water. Season it with Maggi Oyster Sauce and Maggi Magic Sarap.
  • Add the rice into both pans. Mix.
  • Into the seafood version, add the squid balls. Season with black pepper. Add the shrimp. Mix.
  • Into the arroz caldo, add the julienned ginger. Season with white pepper. Mix.
  • Garnish the arroz caldo with fried garlic, spring onions, and hard-boiled egg.
  • Garnish the seafood version with fried garlic, spring onions, and salted egg.

Add rice and it becomes a very filling meal that will help you get through the day. Try both versions and figure out whether the seafood version will be a new favorite of yours.
