There are many ways to cook dulong, but in this recipe, Chef Tatung will show you two ways to cook this variety of small fish. One way is to turn it into an omelet, and another is to turn it into a dish similar to sardines. Whether you make the dulong crispy or soften it into a spreadable treat, you have plenty of options.

Dulong Omelette

Ingredients
  

  • 300 g dulong
  • 5 pcs. egg
  • 3 cloves garlic
  • 1 pc. onion, minced
  • 1/4 cup cornstarch
  • 1 sachet Maggi Magic Sarap
  • Season with black pepper
  • Oil, for frying

Vinegar Dip:

  • 1 pc. onion, minced
  • 2 cloves garlic, minced
  • 1/4 cup cucumber, chopped
  • 1 Tbsp. fish sauce
  • 1 cup vinegar
  • 2 Tbsps. sugar

Instructions
 

  • Crack 5 eggs into a bowl with dulong. Add garlic, onion, cornstarch, and flour. Mix it all together. Season with Maggi Magic Sarap and black pepper.
  • In a pan, heat the oil.
  • Scoop a reasonable amount and pour it into the oil. Flip it over once one side has become golden.
  • Once cooked, remove it from the pan and place it on a plate lined with paper towels to drain the excess oil.
  • Continue cooking until all the batter has been consumed. While the remaining batter is being cooked, prepare the sauce. Chop the onion, garlic, cucumber, patis, vinegar, and sugar. Mix. Make sure to taste it so you can adjust the seasoning to your preference.

Dulong in Olive Oil

Ingredients
  

  • 200 g. dulong
  • Season with salt
  • 1 Tbsp. Maggi Magic Sarap
  • 2 Tbsps. vinegar
  • 2 cups extra virgin olive oil
  • 1 clove garlic, sliced
  • 2 Tbsps. whole peppercorn
  • 6 pcs. laurel leaf
  • 1 tsp. dried basil
  • 4 pcs. dried chili

Instructions
 

  • In a pot, heat the olive oil. Add the garlic, black pepper, bay leaves, dried basil, and dried chili. Mix, then leave it to cook.
  • Season the dulong with salt, Maggi magic Sarap, and vinegar. Mix it all together.
  • When the oil starts bubbling, and the garlic is almost cooked, turn off the heat and add the dulong. Stir. Make sure to break the dulong apart.
  • Once the dulong has been fully incorporated in the olive oil, transfer it to a container and let it cool.
