Spaghetti and Carbonara are delicious and the most common kind of pasta dishes. Rather than having to experience the usual flavors of these two, cook this Pasta Ala Vongole to get a taste of the ocean. Just make sure to buy the freshest clams and prepare them well so you can get the best flavor it has to offer.

With the addition of garlic that serves as its base flavor, along with the unique hint of white wine seeping into the sauce, and the subtle tang of the lemon zest and lemon juice – the pasta tastes simple yet sophisticated. For a creamier finish, add some butter and mix!

Pasta Ala Vongole

Ingredients
  

For Boiling:

  • Water, for boiling
  • 250 g. Barilla Collezione Tagliatelle
  • Salt

For Sautéing:

  • Olive oil, for sautéing
  • 6 cloves garlic, sliced
  • 1 tsp. chili flakes
  • 500 g. Manila clams
  • 1/2 cup white wine
  • 1/4 tsp. lemon zest
  • 4 Tbsps. butter
  • Salt and pepper, to taste
  • 1/4 cup parsley, chopped
  • 3 Tbsps. lemon juice

To Finish:

  • Drizzle with olive oil

Instructions
 

  • In a pot with boiling water, add the Barilla Collezione Tagliatelle. Let it cook.
  • In a pan, heat the olive oil. Sauté the garlic and chili flakes. Once the flavors of the garlic and chili flakes have been infused into the olive oil, add the clams.
  • Make sure to stir the noodles while it cooks so they don’t stick together.
  • When the clams are almost cooked, add a splash of white wine. Mix, then add lemon zest. Let it cook until the clams open. Once they have opened, turn the heat off. Season with salt.
  • Once the noodles are close to being al dente, scoop them out of the water and add it to the pan. Add a bit of the pasta water as well. Mix, then add butter.
  • Add more chili flakes, if desired.
  • Season with salt. Continue to cook while stirring so the sauce becomes creamy. Finish with fresh parsley and black pepper. Toss.
  • Squeeze the lemon juice in.
  • When serving, drizzle olive oil on top if desired.
