Ordering a family-size bilao of Pancit Malabon can sometimes be even more expensive than an entire family meal in restaurants. Depending on where you choose to buy it, the price may be more than what you would expect.

Preparing an entire bilao of pancit might be a daunting task, but that is exactly why you can turn this into a family activity where everyone can help cook a portion of the bilao. Whether it is to blanch the seafood, cook the noodles, or make the sauce–it will be the most satisfying bilao because it was made by everyone in the family.

Pancit Malabon

Ingredients
  

For Blanching:

  • Water, for blanching
  • 2 cups napa cabbage, sliced
  • 1/2 kg. mussels
  • 300 g. pork belly
  • 1/2 kg. shrimps
  • 300 g. squid, sliced
  • Salt

For Frying:

  • Oil, for frying
  • 300 g. pork belly, boiled

For the Sauce:

  • 1/2 cup butter or margarine
  • 1/3 cup annatto oil
  • 8 cloves garlic, minced
  • 1/3 cup onion, minced
  • 200 g. ground pork
  • 6 Tbsps. crab fat
  • 8 cups seafood stock

Shrimp Thickener:

  • 1 1/2 cup shrimp head extractq
  • 1/2 cup cornstarch

Blended Sauce Flavoring:

  • 7 pcs. hard-boiled egg
  • 1/2 cup tinapa flakes
  • 200 g. chicharon

To Season:

  • Fish sauce, to taste
  • 1 pack Maggi Magic Sarap

Noodles:

  • 1 kg. thick Malabon noodles, soaked and blanched

Assemble:

  • Napa cabbage
  • Chicharon
  • Mussels
  • Squid
  • Shrimps
  • Sliced boiled eggs
  • Fried pork belly
  • Spring onions
  • Calamansi

Instructions
 

  • In a pan, heat the butter or margarine and annatto oil. Sauté the garlic, onion, ground pork, and crab fat. Mix well.
  • In a pot with hot water, blanch the shrimps, tahong, squid, napa cabbage, and pork belly. Fry the pork belly after to make it crispy.
  • Add the seafood stock in the pan. Stir, then leave it to simmer.
  • Place the shrimp heads in the food processor. Grind. Pour it into a bowl through the sieve to get rid of the shells.
  • In a bowl, mix cornstarch and the shrimp head juice. Mix well.
  • Place hard-boiled eggs, tinapa, and chicharon into a food processor. Blend until it all comes together.
  • Add the shrimp thickener in the pan. Mix, then add the blended sauce flavoring. Season with patis and Maggi Magic Sarap. Mix well. Make sure to taste the sauce and adjust the flavor as per your preference.
  • Soak and boil the pancit malabon noodles beforehand. Separate the sauce into two pans, then add the pancit malabon noodles. Toss.
  • Top with the napa cabbage, chicharon, mussels, squid, shrimp, boiled eggs, fried pork belly, spring onions, and calamansi.
