With all the flavors of spanish sausage, smoked bacon, ox tail, and ox tripe coming together to create a delicious broth–this Filipino-Style Fiesta Callos recipe will be a mouthwatering treat that becomes the highlight of the event.

The chewiness of the ox tripe along with the crunch of the ox tail add texture to this flavorful dish, making it a recipe that is even more fitting for special occasions. Add all the ingredients you want to enhance the broth, creating a spoonful that will have you asking for another bowl of rice.

Callos

Ingredients
  

For the Callos:

  • Olive oil, for sautéing
  • 8 cloves garlic, minced
  • 1 ½ cup white onion
  • 2 pcs. Spanish sausage
  • 250 g. smoked bacon
  • 750 g. ox tail, boiled
  • 750 g. ox tripe, boiled
  • 3 Tbsps. paprika
  • 1 tsp. oregano
  • 1 cup white wine

For the Broth:

  • 4 cups beef stock
  • ½ cup tomato, crushed
  • Salt, to taste

For Added Flavor:

  • 1 pc. red bell pepper, diced
  • 1 cup green olives
  • 1 cup garbanzos
  • Salt and pepper, to taste

Instructions
 

  • Slice the Spanish sausages and smoked bacon.
  • Boil the ox tail and ox tripe beforehand. Make sure it becomes tender before turning off the heat. The water where it was cooked will become the stock. The secret to a thick and collagen-filled beef broth is the knee of the cow.
  • Pour the olive oil in the pot. Add the garlic before the oil becomes hot. Sauté.
  • When the oil starts to sizzle around the garlic, sauté the onions. Add the spanish sausages and smoked bacon. Toss, then add the ox tripe and ox tail. Season with paprika and oregano. Mix.
  • Pour in the white wine. If you don’t have white wine, you don’t need to add it in. Cook off the alcoholic flavor, then add the beef stock.
  • Add half of the canned tomato. Season with salt. Cover and leave it to simmer.
  • Once it starts boiling, remove the cover and continue to let it cook, so it reduces a bit.
  • Seed and dice the bell peppers. Add it to the Callos. Toss in the green olives and garbanzos or chickpeas. Season with salt and pepper. Mix, then let it simmer.

Pair it with rice and let the broth seep into each grain or pair it with bread and soak in all the flavors of the broth in once slice. Either way, your taste buds will be coated in the exquisite flavors that have been cooking altogether.
