Make eating vegetables delightful by turning it into a delectable soup. With this Sinabawang Gulay recipe, you can have a fresh bowl of steaming soup to keep you warm during the colder months while giving you and your loved ones the health benefits of various vegetables.

Just add all the vegetables you want after preparing the base, then you’ll have a comforting bowl of soup to accompany you through the day. You could follow the recipe as is or you can experiment with the flavor profile by using a different meat as the base along with trying out different vegetables.

Sinabawang Gulay

Ingredients
  

  • 2 pcs. fried fish
  • 1 pc. red onion
  • 6 slices ginger
  • 2 pcs. green chili
  • 2 pcs. tomato
  • 1 cup kalabasa, cubed
  • 5 pcs. sitaw
  • 1 pc. eggplant
  • 4 pcs. okra
  • 1 cup saluyot
  • 1 cup alugbati
  • 1 cup malunggay
  • 8 cups water
  • Patis, to taste

Instructions
 

  • Chop the ginger to the needed size, remove the skin, then slice it. Roughly chop the onions and tomatoes. Add all of it to the pot of boiling water.
  • Add the leftover fish into the pot. Whether you put it whole, chop it in half, or shred it is up to you.
  • Chop the squash into smaller pieces. Add it to the pot. Let it cook.
  • Remove the heads of the okra and chop it in half. Slice the eggplant in half and chop it into smaller pieces. Remove the stem of the green chili and break it in half. Break the sitaw into smaller pieces. Place it all in one bowl. Wash it.
  • Break the alugbati, saluyot, and malunggay apart. Place it all in another bowl. Wash it.
  • When the squash is cooked, but still firm, add the first bowl of vegetables. Let it simmer.
  • Season with patis.
  • Once the first batch of vegetables are cooked, add in the second batch of vegetables. Turn off the heat so the second batch of vegetables cook at a lower temperature, cover the pot, and let it cook.
