Bam-I
Ingredients
Chicken Stock:
- 500 g. pork belly
- 500 g. chicken breast
- 1 pc. chicken bouillon
- Water
- Salt
For Sautéing:
- Oil, for sautéing
- ¼ cup onion, minced
- 4 cloves garlic, minced
- 3 Tbsps. dried shrimp, dehydrated
- 4 - 5 pcs. dried squid, dehydrated
- 1 pc. Chorizo Macau, julienned
- Shredded chicken and sliced pork
- Chicken and pork stock
Seasoning and Noodles:
- Fish sauce, to taste
- 500 g. Good Life Egg Noodles
- 1 cup carrot, julienned
- 500 g. Good Life Vermicelli, soaked
- 2 Tbsps. oyster sauce
Vegetables:
- 2 cups cabbage, sliced
- 1 cup wood ear mushroom, dehydrated
- 4 Tbsps. kintsay, chopped
- 1 tsp. ground white pepper
- 2 Tbsps. sesame oil
Garnish:
- Fried garlic
- Chopped kintsay
- Calamansi
Instructions
- Cut the dried squid into pieces. Rehydrate the dried squid strips and dried small shrimp by soaking it in water.
- In a pot, boil the pork belly and chicken breast. Season with chicken bouillon. Once the pork has softened, remove it from the stock and set it aside to cool.
- Soak the Good Life Premium Vermicelli Noodles in water.
- When the pork has cooled down, slice it into strips.
- Prepare an ice bath. Remove the chicken breast from the stock and drop it into the ice bath to cool down. Tear it into strips with your hands.
- In a pan, heat the oil. Sauté the onion and garlic. Once the onion and garlic have become aromatic, add the dried small shrimp, dried squid strips, sliced Chorizo Bilbao, shredded chicken, and sliced pork. Season with fish sauce. Pour in the chicken stock. Leave it to boil.
- When it starts boiling, add the Good Life Egg Noodles. Make sure it is submerged in the stock so it absorbs the flavor. Cover and leet it cook for 1 minute.
- Once the Good Life Egg Noodles have softened, add the carrots and Good Life Premium Vermicelli Noodles. Mix it all together.
- Season with oyster sauce. Mix. Cover and let it cook.
- When the Good Life Premium Vermicelli Noodles have absorbed an ample amount of the stock, add the cabbage, tenga ng daga, and kinchay. Toss it all together.
- Season with white pepper. Finish with sesame oil.
- Garnish with fried garlic, kinchay, and calamansi.
