Pinoy Menudo
Ingredients
- 1 ½ kg. pork kasim, cubed
- ¼ kg. pork liver, cubed
- 3 pcs. chicken liver, grilled
- 4 Tbsps. soy sauce
- 1 Tbsp. soy sauce
- 1 Tbsp. calamansi juice
Set B:
- Oil, for frying
- 2 pcs. carrot, cubed
- 2 pcs. potato, cubed
Set C:
- Oil, for sautéing
- 4 cloves garlic, minced
- 2 pcs. onion, chopped
- 2 Tbsps. fish sauce
- 3 pcs. bay leaves
- 2 Tbsps. tomato paste
- 200 g. UFC Ready Recipes Menudo Sauce
- 3 pcs. each small red and green bell pepper, cubed
- ½ cup raisins
- 2 Tbsps. sugar
- Salt, to taste
- Pepper, to taste
Instructions
- Prepare the vegetables. Chop the carrots and potatoes into cubes.
- In a pan, heat the oil. Fry the carrots and potatoes. Season with salt.
- To get rid of the metallic taste of the pork liver, soak it in a salt-water brine.
- In a bowl with the pork kasim, add soy sauce and calamansi juice. Toss. Leave it to marinate.
- Mash the grilled chicken liver with a fork.
- Once the carrots and potatoes are finished frying, remove from the pan and transfer them to a bowl. Set aside.
- Using the same pan, sauté the garlic, onion, chicken liver, marinated pork kasim, laurel leaf, and tomato paste. Add the sugar. Toss. Pour in the chicken stock. Mix, then cover and leave it to cook until the pork becomes tender.
- Once the pork has become tender, add the pork liver. Stir. Add the raisins and toss.
- Pour in the UFC Ready Recipes Manudo Sauce. Mix it all together.
- Once the liver is almost fully cooked, add the fried carrots and potatoes. Toss.
- Season with fish sauce and black pepper. Add the red and green bell peppers. Stir.
