Power Meal for a Champ

Ingredients
  

Mushroom and Tofu Sinigang:

  • 1 pack oyster mushrooms
  • 2 pcs. gabi
  • 2 pcs. tomatoes
  • 1 pc. onion
  • 1 thumb ginger
  • 1 pc. radish
  • 2 pcs. tofu
  • 100 g. chicken breast
  • 3 Tbsps. Sinigang mix
  • 1 bunch water spinach
  • Season with fish sauce

Rice:

  • 2 cups black rice
  • ½ cup garbanzo
  • 2 cups kamote
  • 4 cups water
  • Season with salt

Chicken Sisig:

  • ½ kg. chicken breast
  • 1 Tbsp. fish sauce
  • 1 Tbsp. vinegar
  • Season with black pepper

Salsa:

  • 1 pc. red onion, minced
  • 1 pc. white onion, minced
  • 1 pc. cucumber, sliced
  • 1 Tbsp. vinegar
  • 1 Tbsp. calamansi juice
  • 1 Tbsp. sugar
  • ½ Tbsp. fish sauce
  • 2 pcs. green chili
  • Season with salt

Dessert:

  • 1 Tbsp. butter
  • 3 pcs. saging saba
  • 1 Tbsp. Lambanog
  • ½ cup coconut milk
  • Season with salt

Garnish:

  • Sesame seeds

Instructions
 

  • Dice the gabi. Chop the tomatoes. Peel and mince the ginger. Dice the radish.
  • In a pot filled with boiling water, add the gabi, tomatoes, ginger, and radish. Season with salt. Mix.
  • Chop the onions. Dice the tofu. Slice the kangkong. Set aside.
  • In a pot, add the black rice and water. Season with salt. Par cook it. After 3 minutes, add the kamote and garbanzos, then continue to cook it.
  • Debone the chicken breast. Remove the chicken skin from the chicken breast. Slice it into strips. Add it to the pot with the tofu and chicken bones. Mix, then leave it to cook.
  • Season the remaining chicken breast with fish sauce, vinegar, and black pepper. Mix, then leave it to marinate.
  • In a bowl, add tomato, cucumber, and onion. Season with salt, fish sauce, vinegar, calamansi juice, black pepper, green chilies, and sugar. Toss it all together.
  • Grill the chicken. Once the chicken is finished grilling, remove it from the pan and transfer it to a plate. Let it rest.
  • Add the oyster mushrooms to the pot. Pour in some more water, then add the kangkong and sinigang mix. Season with patis.
  • After letting the grilled chicken rest, chop it into cubes. Serve it with the black rice and top it with salsa.
  • In a pan, melt the butter. Add the banana, then pour in the coconut wine. When the flames from the coconut wine die down, pour in the coconut milk seasoned with salt. Garnish with toasted sesame seeds.
