INGREDIENTS:
Set A:
- 350-500 grams bangus belly fillets, cut into serving pieces
- Salt and black pepper, to taste
- 1/3 cup flour, for dredging
- Oil, for frying
Set B (Sauce):
- 2 tablespoons cooking oil (from Set A)
- 6 cloves garlic, minced
- 1 piece onion, sliced
- 1 thumb-sized ginger, peeled and minced
- 2 pieces tomatoes, diced
- 2 tablespoons salted black beans
- 2 tablespoons oyster sauce
- 4 tablespoons vinegar
- 1 small tofu, minced
- 1 tablespoon cornstarch
- 1 cup water
- 1 tablespoon soy sauce
- Cracked black pepper, to taste
- 1 tablespoon sugar
