Sinigang is a Filipino staple food, a soupy dish with basically savory and sour flavor. It has many variations depending on the meat, vegetable, and souring agent used. You can try making a combination of sour yet sweet flavor from the watermelon.

Serves 6 to 7.

INGREDIENTS:

Set A:

  • 1 kilogram beef ribs, cut into 2-inch cubes
  • 2 pieces red onions, quartered
  • 4 pieces native tomatoes, quartered
  • 2 liters water
  • 4 cups watermelon, peeled, seeded, cut into chunks

Set B:

  • 2 pieces gabi, peeled, cut into cubes
  • 1 small radish
  • 2 pieces finger chilies
  • 1 bundle sitaw (long beans), cut into 2 ½ -inch lengths
  • 1 bundle kangkong (spinach), cut into 2 1⁄2-inch lengths
  • 1 pack tamarind or sinigang powder
  • Fish sauce, to taste 

Chef Tatung’s Tip:

  • You can include the white part of the watermelon.
