INGREDIENTS:
Set A:
- 1 whole chicken (1.2 kg.)
- 1 tablespoon salt
- 1 whole onion, quartered
- 2 slices ginger
- 4 cloves garlic, sliced
Set B:
- 4 cloves garlic, sliced
- 3 pcs. star anise
- ½ cup soy sauce
- ¾ cup brown sugar
- ¼ cup vinegar
- ¼ cup banana catsup
- 1 can pineapple chunks with juice
- 1 teaspoon cracked black pepper
- 1 piece red bell pepper, cut into strips
- 1 slice ginger, cut into strips
- 2 cups water
- 1 tablespoon cornstarch
- Salt and pepper, to taste
Chef Tatung’s Tips:
- Marinating the chicken with salt overnight makes a big difference in the texture and flavor of the final product. I recommend you do this if you are preparing for a special occasion.
- You can make this dish days ahead and just reheat in an oven to create a beautiful glazed finish. Preheat the oven to 180°C, and bake for 20 to 30 minutes. Be sure to baste with sauce every few minutes.
