BEEF TAPA

Make your mornings more special by preparing this sweet and flavorful cured meat! Don’t fprget to prepare your garlic rice!

Serving: 5-6 people.

INGREDIENTS:

Set A:

  • 1 kilogram beef (round, sirloin or tapa cut), cut thinly
  • 1 head garlic, minced
  • 6 tablespoons brown sugar
  • 4 tablespoons pineapple juice
  • ½ cup soy sauce
  • 2 tablespoons Worcestershire Sauce
  • 2 tablespoons cornstarch
  • 1 teaspoon cracked black pepper

Set B (Mushroom omelette):

  • 2 tablespoons butter
  • ½ cup canned sliced button mushrooms
  • 1 piece white onion, diced
  • 3 eggs
  • 2 tablespoons milk or cream
  • Salt and pepper, to taste
  • Cooking oil, for frying

Chef Tatung’s Tips:

  • Air-dry beef to develop more flavor and for longer shelf life.
  • Make sure that beef is cut across the grain so it does not end up chewy when cooked.

CHICKEN TOCINO

INGREDIENTS:

Set A:

  • 1 kilogram chicken leg fillet, thinly sliced
  •  ¾ cup white sugar
  • ¼ cup banana catsup
  • 1 tablespoon minced garlic
  • 1 teaspoon ground black pepper
  • ½ cup ice-cold water
  • ¼ cup pineapple juice
  • 2 tablespoons fish sauce
  • Cooking oil, for frying

Set B (Salad):

  • 1 piece cucumber, seeded and diced
  • 1/2 piece red onion, julienned
  • 1 piece tomato, diced
  • ½ cup vinegar
  • Fish sauce
  • Black pepper, to taste

Chef Tatung’s Tip:

  • For pork version, you may use the same ingredients just change the chicken fillets to pork steaks.

DAING NA BANGUS

A fish recipe we can eat everyday! Treat your family by preparing a homemade Daing na Bangus! You will be surprise how satisfying this dish can be! Try making it!

Serves 3 to 5.

Ingredients:

Set A:

  • 3 pieces boneless milkfish (bangus) (1 kilo), butterflied with skin-on
  • 1/2 cup vinegar
  • 1 tablespoon salt
  • 1/2 teaspoon black pepper
  • 4 cloves garlic, crushed

Set B (Ensalada):

  • 2 pieces large onions, chopped
  • 1 piece tomato, chopped
  • 1 tablespoon vinegar
  • 1 tablespoons fish sauce
  • 2 salted eggs (itlog na maalat)

Chef Tatung’s Tip:

  • Make sure to not marinate the bangus longer than two days as the acids in the marinade will break down the flesh.

LONGGANISA HAMONADO

Breakfast made even better with this simply delicious dish! Just a little effort and love, you can recreate and serve this to your family or even start a small business with this recipe!

Serves 5 to 6.

INGREDIENTS:

  • 1 kilogram ground pork
  • 3 tablespoons soy sauce
  • 3 tablespoons fish sauce
  • ¼ cup banana catsup
  • ½ cup refined sugar
  • 1 teaspoon cracked black pepper
  • 6 cloves garlic, minced
  • 4 tablespoons oil
  • 1 tablespoon hot sauce
  • Hog casing or wax paper, as needed

Chef Tatung’s Tip:

  • It is important to add some fat in ground pork whenever you make longganisa.
  • Make sure to use chilled ground meat.
