This deep-fried shrimp dish is very delicious and flavorful and best served with sweet chili sauce! Watch the video below so you can easily recreate this recipe at home!
Serves 3 to 5.
INGREDIENTS:
Set A:
- 1/2 kilogram ground pork (with at least 20% fat)
- 1/2 cup prawns, chopped
- 1 teaspoon salt
- 2 tablespoons oyster sauce
- 1 egg
- 1 tablespoon sugar
- 1 piece onion, chopped
- 6 tablespoons flour
- ½ cup carrots, grated
- ½ cup radish, grated
- 2 tablespoons dried shiitake mushrooms, rehydrated and chopped (optional)
- 1 teaspoon five-spice powder (optional)
Set B:
- 8-10 pieces shrimp, shelled and deveined, tail-on
- Salt, for seasoning shrimps and flour
- 6 tablespoons flour, for dredging
Set C (Breading):
- 2 eggs
- 1 ½ cups breadcrumbs
- Salt
- Cooking Oil
Chef Tatung’s Tips:
- Make sure that pork is properly chilled before starting.
- The shrimps should be moist and juicy.
- The batter should be light and crisp — thick enough to coat the shrimps but thin enough to let you see the natural color of the shrimps by looking at the tail.
- Wet the hand in a little water so that the meat mixture will not stick in our hands when handled.
