Ingredients
For the Pasta:
- Water, for boiling
- Salt
- 500 g. Barilla Spaghetti Noodles
To Render:
- 250 g. Guanciale
Sauce:
- 2 whole eggs
- 4 pcs. egg yolks
- 1 1/2 cup Pecorino cheese, grated
- 1 1/2 cup Parmesan cheese, grated
- 1 cup pasta water
- Guanciale fat
To Finish:
- Salt and freshly cracked black pepper

- Grated cheese
- Guanciale
- Freshly cracked black pepper
Instructions
- In a pot with boiling water, season it with salt, then add the spaghetti noodles. Cover and leave it to cook for 9 minutes.
- While the spaghetti noodles are cooking, prepare the guanciale. Remove the skin-like portion and slice the meat into small pieces.
- In a pan, add the guanciale. Let it cook until the fat renders.
- Prepare the sauce. In a bowl, add the eggs, egg yolks, parmesan cheese, and pecorino cheese. Mix well.
- Make sure to check on your noodles. Stir it every now and then so they do not stick to each other.
- When the guanciale has become crisp and the fat has rendered, remove it from the pan, but leave the rendered fat.
- Once the spaghetti noodles are al dente, transfer it to the pan with the rendered fat of the guanciale. Toss it all together to let the noodles a absorb the pork fat.
- Add the pasta water into the prepared sauce. Mix well.
- Turn off the heat and toss the pasta. Pour the sauce into the pan and toss it all together until it becomes creamy. Season with salt and black pepper.
- Arrange the cooked carbonara on a plate. Garnish it with black pepper, parmesan cheese, and guanciale.
Rather than the familiar flavor of Filipino-style Carbonara, cook this instead to experience the authentic flavors of the famous Italian Carbonara. While the ingredients may cost more than the usual Carbonara, the experience of tasting the original Italian Carbonara will surely be worth it.
