INGREDIENTS:

Set A:

  • 1 whole chicken, cut into serving pieces
  • 4 tablespoons fish sauce
  • 6 tablespoons calamansi juice

Set B:

  • 3 tablespoons cooking oil
  • 1 tablespoon minced ginger
  • 1 piece medium-sized onion
  • 4 cloves garlic, minced
  • 2 tablespoons curry powder
  • 2 pieces laurel leaves
  • 1 piece carrot, diced
  • 3 pieces potatoes, diced, soaked in water with 1 teaspoon vinegar, to stop oxidation
  • 1 cup water or chicken stock
  • Fish sauce, to taste

Set C:

  • 1 cup coconut cream or evaporated milk
  • 1 piece red bell pepper, diced
  • 2 pieces finger chilies, cut diagonally
  • Salt and black pepper, to taste
