Pies are a delightful snack that can be eaten at any time of the day, and with how this has been prepared in a way similar to an empanada, it has turned into a snack that can be eaten while on the go. It is delicious, but it can be a bit messy because of its crust.

With a creamy chicken filling and a flaky crust, this Chicken Pie will be a tasty treat that can fill you and your family with enough servings. Make sure to cook more than you think so everyone can have more than a piece, and if there happens to be leftovers, just reheat it and it will still be delicious.

Ingredients
  

Pie Crust:

  • 3 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1 cup chilled butter
  • 1 cup cold water

Egg Wash:

  • 1 pc. egg yolk
  • 1/4 cup milk
  • Pinch of salt
  • Flour, for dusting

Chicken Stock:

  • Water, for boiling
  • 1/2 kg. chicken breast
  • 1 pack Maggi Chicken Cubes

Pie Filling for Two Batches of Crust:

  • 1/2 kg. chicken breast, boiled
  • Oil, for sautéing
  • 1/2 cup butter
  • 3 cloves garlic, minced
  • 1 pc. onion, minced
  • 1 stalk celery, chopped
  • 3 pcs. dried shiitake mushroom
  • 1 pc. carrot, diced
  • Season with salt
  • 1 tsp. dried oregano
  • 1/4 cup flour
  • 2 cups chicken stock (from the boiled chicken breast)
  • 1 pack Nestle All-Purpose Cream
  • 1/2 cup corn kerne;l
  • 1 cup cheese, diced
  • 2 Tbsps. fish sauce
  • Season with black pepper

Instructions
 

  • Prepare the pie crust. In a bowl, add all-purpose flour, sugar, salt, and baking powder. Make sure to mix it all together and sift it through a sieve.
  • After sifting, add the chilled butter. Massage the butter into the flour until you achieve a sandy consistency. Once all the butter has been mixed into the flour, pour in the cold water and mix. Make sure it is lumpy–not too smooth, not too wet, not too dry.
  • When the dough starts to come together, press it together and shape it into a ball. You can transfer it to a wider work surface and continue to press the dough until it becomes a ball. Once it has taken the shape of a ball, wrap it in plastic wrap and leave it to chill for an hour.
  • Start cooking the chicken filling. In a pan, heat the oil and butter. Sauté the garlic, onion, celery, dried shiitake mushroom, and carrot. Season with salt.
  • After sautéing for a while, add the oregano, flour, chicken stock, Nestle All-Purpose Cream, shredded chicken, and corn kernel. Season with patis. Mix it all together, then turn off the heat and add the cheese. Season with black pepper. Transfer it and make sure to allow it to cool before using it. You can let it cool to room temperature or chill it in the refrigerator.
  • When the dough has finished resting, slice it into quarters. Roll each piece into a ball.
  • Make the egg wash. In a bowl, mix egg yolk, fresh milk, and salt.
  • Roll it flat, then fold and roll it out again. Once it has been rolled out, scoop the filling and plae it in the middle. Brush the edges of the dough with the egg wash. Fold it over the filling and press with a fork to seal the edges. Arrange it on a pan lined with wax paper.
  • Brush the crust with egg wash and poke it with holes so it does not explode.
  • Bake it for 15 - 20 minutes at 180°C.
  • When done, transfer them to the cooling rack. Cool down a bit before serving or storing.
