Serves 6 to 7.
INGREDIENTS:
Set A:
- ½ kilogram ground beef
- 2 pieces chorizo de Bilbao, diced
Set B:
- 1 head garlic, minced
- 1 piece large onion, chopped
- 1 tablespoon Spanish paprika
- 1 tablespoon dried oregano
- 1 teaspoon ground cumin (optional)
- 500 gram tomato sauce
- 2-4 tablespoons vinegar
- 1 teaspoon sugar
Set C:
- 2 cups beef stock
- 2 cans cooked red kidney beans
- 2 tablespoons chili flakes
- Salt and pepper, to taste
Tips:
- You can make this in advance. Flavors only develop as days go by. You can freeze this, too. Have some in store when you crave for nachos or a chili dog. It is good with steamed rice as well.
- You can serve with freshly chopped cilantro and sour cream.
- You can even dilute this a bit with some beef stock to make a quick chili soup and serve with bread or flour tortillas.
- For variation, you can add canned sweet corn kernels after adding the beans.
