Classic Leche Flan
Ingredients
- 1/4 cup sugar
- 10 pcs. egg yolk
- 2 pcs. whole egg
- 1 can condensed milk
- 1 can evaporated milk
- 1 tsp. vanilla
- Pinch of salt
Instructions
- Crack the eggs into a bowl. Add the egg yolks. Mix well.
- Add the condensed milk and mix again. Slowly add in the evaporated while mixing carefully to avoid bubbles. Add the vanilla and salt. Mix them all together.
- Prepare the caramel. In a pan, add the sugar and water. Make sure to drizzle the water on the sides, then let it sit until it caramelizes. Make sure not to stir it so it does not crystallize. Be careful with handling it as it is very hot. Wait until it becomes a nice amber color.
- Strain the leche flan mixture to get rid of any lumps. You can double-strain it, so the mixture becomes silky smooth.
- Ready your llanera. Pour a layer of caramel in, then let it set. Once it has set, fill your llanera with the leche flan mixture. Tightly cover it with aluminum foil so that water or steam will not seep in.
- In a steamer with boiling water, put the llaneras in. Cover and let it steam for 15 to 18 minutes.
- Once cooked, chill it for a few hours to let it set.
