Herb Roast Chicken
Ingredients
Marinate:
- 1 whole Premium Choice Chicken
- 1 Tbsp. salt
- 1 Tbsp. crushed black pepper
- 1 whole garlic
- 1 tsp. dried rosemary
- 1 tsp. dried oregano
- 1 tsp. lemon zest
- 1 Tbsp. olive oil
- ½ pc. lemon juice
- 1 pc. onion
For Boiling:
- Water, for boiling
- 1 pc. carrot, chopped
- 4 pcs. potato, chopped
- Season with salt
Drizzle Over the Chicken:
- 2 Tbsps. olive oil
Gravy:
- 1 Tbsp. flour
- 2 Tbsps. butter
- 1 cup chicken stock
- Season with salt and black pepper
Instructions
- Season the chicken with salt and black pepper.
- Pound the garlic and remove the peel. Add the dried rosemary and oregano. Mash it all together. Add the lemon zest. Trinkle in the olive oil and season with salt. Mix it all together.
- Roll the lemon around and slice it in half.
- Transfer the pounded ingredients to the bowl with the chicken. Squeeze the lemon juice in. Pour in the soy sauce. Rub the marinade all over the chicken, then stuff the lemon and onion inside the chicken. Leave it to marinade for a few minutes.
- Poke a hole in the skin so you can insert the chicken legs and seal the end of the chicken. Tuck the wings under the chicken to avoid burning it.
- In a pot with water, place the potatoes and carrots in. Season the water with salt. Cook it for 10 minutes.
- After letting it boil for 10 minutes, peel the carrots with a spoon. Slice the potatoes into quarters. Chop the carrots according to your preference. Place it all in a bowl. Season with salt and black pepper. Pour in the olive oil and toss it together. Arrange it around the chicken. Drizzle olive oil on top of the chicken. Season with more pepper.
- Place it in the oven and roast it for 1 hour and 10 minutes.
- Once the chicken is cooked, remove it from the oven. Let it rest before carving into it. Arrange both the chicken and the vegetables on a plate.
- In the pan with all the juices of the chicken, add the flour and scrape all the remnants off the pan. Add the butter. Stir constantly as the butter melts. Once all the butter has melted, pour in the chicken stock. Whisk it all together until it becomes smooth and all the lumps have disappeared. Season with salt. Pour it into a bowl while pouring it through a strainer. Season with black pepper. Mix it all together, then add a spoonful of butter.
- Pour the finished gravy into your sauce dish of choice. With the chicken now rested, you can carve into the chicken. Arrange the sliced chicken onto the plate with all your prepared sides. You can drizzle a bit of the lemon juice on top of the chicken as well to enhance the flavor even further.
