Been wanting to try this Chinese-inspired noodle soup but with a touch of Filipino culture? This simple Lomi recipe is the answer! Just like the famous Batangas Lomi, you and your family will approve with the classic ‘Ala eh!’ expression!
Serves 3 to 5.
INGREDIENTS:
Set A:
- 2 tablespoons cooking oil
- 4 cloves garlic, minced
- 1 piece onion, chopped
- 1 cup pork kasim, cut into strips
- 1/2 cup pork or chicken liver, cut into strips
- 1 cup kikiam or squid balls, cut into halves
Set B:
- 6 cups water or pork stock
- 1/4 kilogram lomi noodles
- 3 tablespoons soy sauce
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
Set C:Â
- 3 tablespoons cornstarch
- ¼ cup water
- 1 piece carrot, julienned
- 1/2 piece cabbage, chopped
- 2 eggs, beaten
- Chopped onion leeks, for garnish (optional)
Chef Tatung’s Tips:
- Use a large pot so you can sauté all the aromatics and at the same time, boil the broth and cook the noodles on the same pot.
- You can prepare the toppings ahead of time to lessen cooking time.
