Apolinario Mabini is an iconic hero of the revolution and a great intellectual leader. Remember his acts of bravery as he fought for the independence of the Philippines. Despite his physical limitations, his insightfulness became the fuel that supported the foundation of the First Philippine Republic.

With all his contributions, his birthday must be celebrated with the dish he favored most, Bulanglang—a vegetable dish popularly known to be from Batangas, in the Southern Tagalog region, but has several variations across the archipelago.
