Menudo, known for its savory tomato-based sauce, is given a unique twist by taking away the red hue and tanginess of tomatoes. Instead of using the watery fruit to add a spark of flavor to the dish, vinegar is used to enhance the deliciousness of the pork.
Despite lacking the vibrance of tomatoes, it still has the explosion of flavor that will keep you wanting for more. With that delectable sauce and bite-sized ingredients, it can be served with either rice or pandesal.
Ingredients:
– ¾ kg. menudo cut
– ¼ kg. pork liver
– Season with salt and pepper
– 1 pc. carrot, diced
– 2 pcs. potato, diced
– 1 can Vienna sausage
– Season with salt
– 1 pc. onion, minced
– 5 cloves garlic, minced
– 1 Tbsp. vinegar
– 4 pc. Laurel leaf
– 230 g. can liver spread
– 1 pc. Maggi chicken cubes
– 2 pcs. red bell pepper
– ¼ cup raisins
– Season with freshly cracked black pepper
Procedure:
1. Season the pork with salt and pepper. Mix well.
2. Soak the pork liver in salt brine and drain. Season with salt again.
3. In a wok, heat the oil. Sauté the carrot and potato. Season with salt. Add Vienna sausage. Set aside.
4. Using the same oil, sauté the pork liver. Set aside.
5. In the same pan, sauté the onion and garlic. Add the pork. Toss. Add vinegar, laurel leaves, liver spread, chicken cube, and water. Let it simmer until the pork becomes tender.
6. While the pork is cooking, prepare the bell peppers and add it to the vegetables. When the pork has softened, put the vegetables back in. Add the raisins. Add the liver by the end. Toss. Season with black pepper.
