Puto Cake
Ingredients
Dry Ingredients:
- 1 1/2 cup cake flour
- 1/4 cup white sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
Wet Ingredients:
- 4 pcs. egg yolks
- 1/2 cup coconut milk
Meringue Mixture:
- 4 pcs. egg whites
- 1/2 tsp. cream of tartar
- 5 Tbsps. white sugar
Topped With:
- Salted egg
- Grated cheese
Instructions
- In a bowl with a sifter, add cake flour, white sugar, and salt. After sifting all these ingredients, add the egg yolks and coconut milk. Mix well.
- In a different bowl, add the egg whites and cream of tartar. Beat. While beating it, add the white sugar. Stop beating it once it has achieved soft peaks.
- Scoop ⅓ of the meringue mixture and add it to the Puto Base. Mix. When you have fully mixed the first meringue mixture, add the next batch and continue to mix. Once the second batch of meringue mixture has been fully incorporated, add the last bit or meringue mixture and mix again.
- Line the baking pan with a wax paper. Transfer the Puto Cake Mixture into the baking pan. Make sure to tap it lightly on a flat surface to get rid of the large bubbles.
- Grate the cheese on top. Add the salted egg on top.
- Place the baking pan with no cover in a steamer and let it cook for 20 - 25 minutes. Make sure not to open the steamer while cooking so the Puto Cake does not lose its fluffiness.
- Once 25 minutes have passed, turn off the heat and remove the cover. Let it cool.
- When it has cooled down, score the edge with a knife to make the Puto Cake easier to remove from the baking pan. Place a plate on the opening of the baking pan and flip, transferring it. When it has been removed from the baking pan, put the baking pan aside and remove the wax paper.
- Using another larger plate, flip it over so it is right side up.
